Chivo uses only market fresh, locally-sourced meats and produce in preparing his innovative twists on Mexican classics. His signature salmon with sautéed spinach, cilantro rice and chipotle sauce is a crowd favorite, while his take on classic roast chicken—with chipotle pomegranate sauce and roasted potatoes—is an instant classic.
